Pumpkin Oat Muffins

I modified a recipe I found here.

1/4 cup of egg whites

1/3 cup of brown sugar

1/3 cup of white sugar

1 can of pumpkin

1 tsp vanilla

2/3 cup milk

1 cup of whole wheat flour

1/2 cup of Old Fashion oats

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ginger (instead of nutmeg and ginger, you can use 1/2 tsp of pumpkin pie spice)

Dark chocolate chips to taste (optional)

Dried cranberries or other fruit to taste (optional)

Preheat oven to 425F. Spray a 12-serving muffin pan. Put Old Fashion oats in a blender and blend until they make flour. You may need to blend then shake and blend again until all the oats are turned into flour. In one large bowl add sugars, pumpkin, eggs, vanilla, and milk. Stir well. Sift in blended oats, whole wheat flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg. Add any extras you wish, such as dark chocolate chips or dried cranberries. Mix. Fill each serving in the sprayed muffin tin 3/4 of the way and sprinkle with cinnamon. Bake for 20 minutes or until fork comes out clean.

Note: These muffins came out delicious. I had one last night when it was still warm and it was heaven. I had another today cold and it was perhaps even more flavorful. I am much more a cook than I am a baker, and even I could make these well. Enjoy!
